SPICY BEEF, AVOCADO AND 1912 STILTON® QUESADILLA

Ingredients

  • 8 large plain tortillas
  • 150g 1912 Stilton®, crumbled
  • 20ml vegetable oil
  • 1 white onion
  • 500g 5% minced beef
  • ½ tsp chilli powder
  • ½ tsp ground paprika
  • ½ tsp ground cumin
  • 1 avocado
  • 50g grated cheddar
  • 40g chopped coriander

Introduction

Easy, fun and packed with flavour, these quesadillas will quickly become a family favourite. It’s infinitely adaptable, add more heat, less heat, swap out mince for jackfruit for a vegetarian option. The end result will always be the same, a seriously delicious dish!

Method

  1. In a large saucepan, heat oil, fry white onions until soft.
  2. Add mince, making sure all lumps of mince are broken down, cook for 10 minutes.
  3. Add spices, fry until the excess moisture has evaporated. Season as required.
  4. Spread the cooked mince evenly over the tortillas, top with sliced avocado, cheddar, crumbled 1912 Stilton®, and coriander.
  5. Fold these into quarters and fry in a frying pan until golden brown. Serve.
