SPICY BEEF, AVOCADO AND 1912 STILTON® QUESADILLA

Ingredients
- 8 large plain tortillas
- 150g 1912 Stilton®, crumbled
- 20ml vegetable oil
- 1 white onion
- 500g 5% minced beef
- ½ tsp chilli powder
- ½ tsp ground paprika
- ½ tsp ground cumin
- 1 avocado
- 50g grated cheddar
- 40g chopped coriander
Introduction
Easy, fun and packed with flavour, these quesadillas will quickly become a family favourite. It’s infinitely adaptable, add more heat, less heat, swap out mince for jackfruit for a vegetarian option. The end result will always be the same, a seriously delicious dish!
Method
- In a large saucepan, heat oil, fry white onions until soft.
- Add mince, making sure all lumps of mince are broken down, cook for 10 minutes.
- Add spices, fry until the excess moisture has evaporated. Season as required.
- Spread the cooked mince evenly over the tortillas, top with sliced avocado, cheddar, crumbled 1912 Stilton®, and coriander.
- Fold these into quarters and fry in a frying pan until golden brown. Serve.
