1912 STILTON MARRY ME CHICKEN
Ingredients
- 3 tbsp oil from the sun-dried tomatoes
- 2 chicken breasts
- Salt and pepper
- 2 cloves garlic, finely chopped
- ½ red onion diced
- 1 tsp fresh thyme leaves
- ½ tsp crushed chilli flakes
- 100ml chicken stock
- 120g chopped sun-dried tomatoes
- 100ml double cream
- 100g crumbled 1912 Stilton
- Fresh basil leaves to serve
Introduction
Our Stilton Marry Me Chicken is a rich, flavour-packed dish featuring golden pan-fried chicken in a creamy Stilton sauce with sweet sun-dried tomatoes. As the cheese melts into the cream and stock, it creates a velvety, savoury sauce with hints of garlic, thyme and gentle chilli warmth.
Indulgent, comforting and irresistibly good – perfect with crusty bread or potatoes to mop up every last drop.
Method
1. Flour and season the chicken breasts then fry in a lidded pan (lid needed later) in a little of the tomato oil until crispy and golden on both sides but not cooked all the way through. Set the chicken aside while you carry on in the same pan.
2. Add a little more oil and soften the onion over a low-medium heat for 5 minutes.
3. Lower the heat and add the garlic, chopped tomatoes and chilli. Add the thyme leaves and cook for 1-2 minutes.
4. Stir in the chicken stock, cream, and 1912 Stilton. Bring to a gentle simmer then pop the chicken back in and cover with the lid to cook through for around 12 minutes. Stir occasionally so the sauce doesn’t burn on the bottom of the pan.
5. Finish with extra crumbled 1912 Stilton and fresh basil and enjoy straight away with fresh greens or salad and some bread or potatoes for mopping up that deliciously creamy sauce!
