1912 STILTON AND CREAMY MUSHROOMS ON TOAST

Ingredients
- 2 slices of sourdough
 - 1912 Stilton cheese, crumbled
 - 10g butter
 - 2 garlic cloves, minced
 - Small bunch of fresh thyme, stalks removed
 - 200g of mushrooms (portobello, chestnut, wild) chopped
 - 50ml cream
 - Salt and pepper

This classic dish features a delectable blend of rich, creamy Stilton cheese paired with sautéed mushrooms, served atop perfectly toasted bread for a satisfyingly savoury experience.
Method
- Melt the butter in a pan, when hot, add the mushrooms and cook on a fairly high heat to remove the moisture and char.
 
- Near the end of the cooking of the mushrooms, add the grated garlic cloves and cook for another 30 seconds
 
- Next add the cream and give it a good stir, crumble some 1912 Stilton on top.
 
- Toast the sourdough slices and butter generously.
 
- Top the sourdough with the cooked mushrooms, finish with more crumbled 1912 Stilton and fresh thyme
 
- Season and enjoy.
